Chocolate Butternut Squash Mousse

Chocolate Mousse made with Butternut Squash? Wait! What?!

Makes 16 two-ounce servings

Ingredients:

1 Medium Butternut Squash – peel and cut into cubes (approx. 3 cups)

198g Lily’s Semi-Sweet Chocolate Chips

2 Tbsp Maple Syrup

2 tsp Cinnamon – optional

1 generous pinch of Kosher salt


Step 1.  Place squash in a pot covered with water and bring to a boil.  Turn heat down and simmer for 30 minutes or until fork tender. Reserve 1 cup of cooking water and drain remaining water.

Step 2.  Return hot squash to the pot. Add chocolate chips, maple syrup, cinnamon, and salt.  

Step 3.  Use an immersion blender to mix until smooth. Use the reserved water to thin the mixture into a smoother consistency if needed.

Step 4.  Portion servings and refrigerate until cool. Eat as is or top with your favorite fruit or coconut whipped cream.
