Greek Chicken Meatballs

A high protein meal that can be served with a side of tzatziki, rice, or a Greek salad.

Greek Chicken Meatballs – 

Makes 20 two-ounce meatballs

Ingredients:

2 lb Ground Chicken

1 Yellow Onion, chopped

½ cup Parsley, chopped

¼ cup Mint, chopped

6 Garlic cloves, minced

2 Eggs

2 Tbsp Coriander

1 Tbsp Cumin

1 tsp Cinnamon

½ tsp Cayenne Pepper

1 generous pinch of Cloves

½ tsp Black Pepper

2 tsp Kosher Salt

2 Tbsp Avocado or Olive Oil – divided 


Step 1.  Mix all the ingredients together.

Step 2.  Heat 1 Tbsp of oil in a pan. Oil a 2-oz cookie scoop to portion the meatballs into the pan. Cook in two batches. Cook for 3-4 minutes on medium heat. Flip and press slightly. Cook for another 3-4 minutes until internal temp reaches 165F.  

Step 3.  Serve with Tzatziki Sauce and enjoy.
